Serve this Chicken salad over chilled garden greens such as spinach, leaf lettuce and/or Romaine.
2 Cups diced chicken pieces
1/2 Cup red grapes, halved
1/2 Cup almonds, slivered
1/2 Cup diagonally sliced celery
1/2 Cup chopped red onion
1 tsp. dill weed, optional
1/3 Cup Mayonnaise
1/3 Cup light sour cream or plain yogurt
1/3 Cup raw sunflower seeds and chopped fresh parsley for garnish
For something special, add diced dried apricots!
Combine salad ingredients; double amounts for a larger crowd. Add mayonnaise to taste. Garnish with sunflower seeds and fresh or dried parsley.
This salad is VERY easy to put together. Be creative and use what you have!!!
